One of the greatest things about Thanksgiving is that come Friday you find yourself with a whole bunch of leftovers. Turkey and stuffing sandwiches are wonderful, but what else can we make from gluten-free Thanksgiving leftovers?
Here are some fun ideas to keep you satisfied in the days, or maybe even weeks depending on how much extra food you have, after Thanksgiving.
If you’re looking for something light after your Thanksgiving indulging, how about some leftover turkey soup. Add your turkey to some vegetable stock and some of your favorite spices and voila! Rice noodles are a great addition to turkey soup too.
Chili is another great dish for using any leftover turkey you have. Use any remaining veggies you have along with the turkey and serve it alone or with mashed potatoes.
Making home made sushi can be fun so why not throw in some leftovers to make this delicious Turkey and Cranberry Sushi from Closet Cooking. What a creative idea!
If you have a bunch of extra pumpkin and you’re not sure what to do with it, use it to make a delicious Pumpkin Rice Pudding or gluten free pumpkin pancakes.
If you fancy baking something using your leftovers, Pumpkin and Cranberry Muffins, Cranberry and Chocolate Chip Cookies, Pumpkin Cheesecake or Chocolate Pumpkin Brownies are a few delicious ideas!
