Do you find breakfast or brunch as challenging? I really love eggs and omelets and can usually subside on those, or my previously blogged about yogurt and granola mainstay but on weekend mornings with the family I get a little bored with the usual standbys.
This morning I decided to give Ginny Bakes “Peace, love & crumble muffins” a try. I had all the ingredients that the mix called for on hand: 1 egg, butter, Greek yogurt, vanilla and muffin tins. The mix directions were straight forward and the muffins only needed about 25 minutes to bake so they were easy to pull together on a wintery Sunday.
The prep was easy. The mix came in two parts, one for the muffin and one for the topping. Everything came together and went into Christmas themed muffin tin liners.
The mix made 16 small, moist and soft-in-the-middle muffins with a nice sugary, slightly crunchy top. I thought the top would be the usual sugar and butter but you could also taste apple and coconut in certain bites. These passed the taste test of the whole family, confirming that I could easily use these for company to accompany eggs at a brunch or even serve as a dessert.
Ginny Bakes was started by a mom in Miami who wanted to create healthy organic foods including desserts. She has a whole line of cookies, mixes and bars that are largely organic, preservative-free, kosher and made in a dedicated gluten-free facility. Many items in her line are also vegan. I’ve seen Ginny’s products at my local Homegoods, Marshall’s and T.J.Maxx stores. If they aren’t sold in your area you can order them online.
The “Chocolate Chip Love” cookie mix, too, was excellent. They stayed soft and didn’t taste like the typical mix chocolate chip cookie. I had to keep reminding my family that they were the gluten-free cookies and that they should eat their own regular ones and leave mine alone!
