Unexpected guests used to stress me out because I have never been good at entertaining. Either something ends up burned or I feel I have ignored my friends. Luckily, I now have a box or two of GeeFree’s frozen appetizers on hand as they are easy to cook, gluten-free and a big crowd pleaser.
My favorite items are the Spanakopita and the Franks in a Blanket.
The Spanakopita is spinach and feta cheese inside a flaky pasty shell. Yes, that’s right, a gluten-free puff pastry made from potato starch that’s every little bit as delicious as it’s non-gluten-free counterpart. Spanakopita is one of my favorite Greek-style snacks and even works for a light lunch, plus kids will devour them up without even giving the spinach a second thought.
The Franks in a Blanket use the same potato starch-based, flaky puff pastry shell and wrap it around a mini piece of hot dog. I know you’re thinking that pigs in a blanket are not sophisticated enough for your friends, but when you pair these little guys with a spicy cocktail sauce or Dijon aioli, everyone at the table will be reaching for more. If your social life consists mostly of hanging out with picky eaters who use sippy cups, these franks are the perfect finger food.
For both appetizers, all you have to do is thaw them and then throw them in the oven for 20-25 minutes.
They also make great snacks while watching the football on Sundays. They’re a lot better for you than most frozen goods so you don’t feel greasy afterwards.
