Gluten-free Baked Goods in Tallahassee, FL

menu_05When passing through Tallahassee on the way to Panama City last week, we picked up some gluten-free Cinnamon Raisin and Pumpkin Bread from Three Sons Bakery. This is not a dedicated gluten-free bakery, but it is a commercially approved kitchen that only has one person working in it. Therefore, the gluten-free products are baked on  specific days, when gluten products are not being prepared.

The Cinnamon Raisin Bread was very good and made great toast. Like most gluten-free bread, it is much better heated than at room temperature. The Pumpkin Bread however, was a whole different animal. It was the best gluten-free pumpkin bread I’ve had that I didn’t make myself. The bread was perfect at room temperature and heavenly when heated with a little butter added!

By the time we finished the last piece of pumpkin bread on Sunday morning I questioned my decision to give half the loaf to someone else! I now have to try and convert my pumpkin bread recipe to be as spicy as this one, as my husband loved the extra cinnamon and/or allspice in this bread.

If you live in the Tallahassee area, consider checking out the offerings from Three Sons Bakery. Everything is pre-ordered and the owner is working on adding even more gluten-free items to her repertoire. The Black Dog Cafe serves gluten-free apple bread from Three Sons Bakery to all their customers. No one knows the difference – they just love the bread!

Here are the basic ingredients for Three Sons Bakery gluten-free breads:

Ingredients. Brown & White Rice flour, Water, Potato and or Corn Starch, Tapioca Flour, Dried Milk Powder, Eggs, Garfava Flour, Sorghum Flour, Brown Sugar, Guar Gum, Salt, Yeast, Soy Lecithin, Gelatin, Vinegar.

We have not been to the Black Dog Cafe so if you go, you’ll want to check out how the gluten-free bread is stored. If it’s mixed in with gluten baked goods, it would not really be considered gluten-free due to cross contamination issues. The cafe does not have a website but is located at 229 Lake Ella Dr., Tallahassee, FL 32303 / 850-224-2518.

If you want to make your own pumpkin bread, check out this recipe from Recipe Zaar. I think it can be made dairy free by using canola or vegetable oil in place of the butter. You can also use your favorite gluten-free flour mix in place of the flour blend called for. We use Beth’s All Purpose Gluten-Free Flour from Gluten-Free Pantry.

Fall is the perfect time to bake gluten-free pumpkin bread. Quick bread recipes in general are much easier to convert to gluten-free, than breads that need to rise. If you have a family gluten pumpkin bread recipe like we do, try substituting the flour cup for cup with your favorite gluten-free flour. Then add 1/4 cup of unsweetened applesauce per 9″ x 5″ loaf. This trick yields a very moist quick bread of any kind!
