I always make one loaf of gluten free bread for stuffing, but I add sage, poultry seasoning, celery salt, minced onion and gluten free chicken broth instead of water. Bake, slice, cube and dry at least a month before, then I freeze it until I need it. If I don't need it all for stuffing, I grind it and add to my meat loaf. I'm the only gluten free person in my family, but not one person leaves the table hungry!
